Meatloaf, from Shauna

AKA, the meatloaf that made Shauna a believer...

1 pound beef
1 egg
1 tbsp minced garlic
3 tbsp Parmesan
1/2 cup Italian bread crumbs
1 tbsp worcheshire sauce
3 tbsp BBQ sauce
1/2 cup shredded chedder
chopped olives
2 tsp ground pepper

Bake at 375* for about an hour.

Beef Stroganoff, from Shauna

Beef Stroganoff

1lb beef tenderloin or sirloin steak, cut into chunks or strips.
2 tbsp butter
*1/2 pound mushrooms, washed, trimmed and sliced*
1 can beef broth
2 tbsp ketchup
1 clove garlic or 1/2 tsp minced garlic
1 tsp salt
3 tbsp flour
1 cup sour cream

*Melt butter in large skillet and saute mushrooms until done, then remove*
In same skillet, brown meat. Reserve 1/3 cup broth, stir in remaining broth, ketchup, garlic and salt. Cover and simmer 15 minutes.
Blend reserved broth and flour, stir into meat mixture.
*Add mushrooms back in* Heat to boiling, stirring constantly, and boil 1 minute. Reduce heat, stir in sour cream, and when hot serve over noodles or rice.

Sour Cream Pork Chops, from Shauna


INGREDIENTS
6 pork chops
salt and pepper to taste
garlic powder to taste
1/2 cup all-purpose flour
1 large onion, sliced 1/4 inch thick
2 cubes chicken bouillon
2 cups boiling water
2 tablespoons all-purpose flour
1 (8 ounce) container sour cream
DIRECTIONS
Season pork chops with salt, pepper, and garlic powder, and then dredge in 1/2 cup flour. In a skillet over medium heat, lightly brown chops in a small amount of oil.
Place chops in slow cooker, and top with onion slices. Dissolve bouillon cubes in boiling water (I just use chicken stock usually) and pour over chops. Cover, and cook on Low 7 to 8 hours.

After the chops have cooked, remove chops. Be careful, the chops are so tender they will fall apart. In a small bowl, blend 2 tablespoons flour with the sour cream; mix into meat juices. Turn slow cooker to High for 15 to 30 minutes, or until sauce is slightly thickened. Serve sauce over pork chops on egg noodles or rice.

Frozen Chicken Fix, an idea from Shauna

If you have frozen chicken tenders, put them in a skillet with some EVOO, put the lid on, and they'll be done in 10 min. If you use frozen chicken breasts, it takes 20 min. Turn them once, and if they look dry, add some water or chicken stock. Flavor how you want. I believe these directions are on the bag of chicken..

Roasted Crockpot Chicken, an idea from Shauna

I put the chicken in the crock pot for 8 hours, on low. I put some poultry seasoning, salt, pepper, and butter on the chicken, and let er rip. No water! It created so much juice on it's own it was grossly fascinating. I basted it twice while cooking. My complaint was that it wasn't seasoned enough and it was suggested to put spices (maybe a bunch of whole spices in a cheesecloth bag?) in the cavity. Or do a rub under the skin.

Angel chicken from Shauna

Angel Chicken

1 can golden mushroom soup
1/2 cup white wine
1/2 package (4 oz) cream cheese
1 package dry Italian dressing seasoning
Raw rotisserie chicken (or chicken breasts, or cooked chicken)

Add all ingredients into slow cooker, and cook until thick and creamy. If you use cooked chicken, add it in the last 1/2 hour or so.

I serve it over angel hair pasta (hence the name). Not the healthiest meal, but yum!
