Tuna Dinner Salad, from Cara
1 large head red or green leaf lettuce, chopped
2 ribs celery, chopped
3 tomatoes, chopped
4-6 oz. colby cheese cut into chunks, optional
1 can chickpeas, drained and rinsed
1 can tuna, drained (can be tuna in oil or water)
Toss all ingredients with red wine vinaigrette.
red wine vinaigrette
1/2 c. red wine vinegar
1 t. salt
1/2 t. black pepper
1 T. Dijon mustard
1 clove garlic, minced OR 1 t. garlic powder
1 c. olive oil
Whisk together the first 5 ingredients in a small bowl. While whisking, add the oil in a thin, steady stream until combined. Taste and adjust seasoning if necessary.
